The Best Tabouli You'll Ever Eat!

TIME: 60 minutes (includes standing time)

Makes: 1 large side salad

VEGAN | DAIRY FREE | REFINED SUGAR-FREE

 

This super fresh and tasty Middle eastern salad is also commonly known as tabbouleh.
Tabouli goes so well with falafel and hummus on a tasting platter - easy to create for entertaining!

 Ingredients:

  • 120 grams bulgur (burghul)

  • 75 ml Olive Oil

  • 4 tbsp Lemon Juice

  • 5 tomatoes

  • 4 finely sliced spring onions

  • handful chopped flat-leaf parsley

  • handful chopped mint leaves

  • 75ml Olive oil

We LOVE this recipe because it’s super simple.

  1. Soak the bulgur in cold water for about 10-15 minutes.

  2. Drain the bulgur and place into a bowl with 75ml of olive oil and 4 tbsp lemon juice.

  3. Cover and set aside for about 30 minutes.

  4. Meanwhile, deseed and finely chop the tomatoes, finely chop the parsley, mint and spring onions. Place all of these in a bowl together.

  5. Mix through the bulgur with the vegetables and herbs, add in another 75ml olive oil and 4-5 tbsp lemon juice.

Serve with pitta bread, falafel and hummus.
