Fluffy Pancakes
Nut Free
Ingredients:
2 scoops of Unpackaged’s Pancake Mix (approx. 500 grams)
1 1/2 cups of milk - plus an extra 1/4 cup if needed
1/4 cup melted butter
1 large egg
2 tsp vanilla (optional)
Creating the Magic:
Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there maybe a couple of lumps but that's okay).
Heat a nonstick pan over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with the remaining batter.

Try something different:
Separate the mix into 3 bowls. In each bowl add one of the following: 1/4 tsp of blue spirulina, acai berry powder or matcha powder.
This will create different coloured pancakes.
