Dairy Free Granola Cake

Ingredients:
1/2 cup cacao powder
2 1/2 cups self raising flour
1/2 cup Fodden toasted granola
1/2 cup raisins, chopped
300g coconut yoghurt
1/4 cup maple syrup
2/3 cup caster sugar
1 1/2 cups soy or nut milk
CHOCOLATE MUESLI TOPPING
2 tablespoons cacao powder
1/2 cup icing sugar mixture
1/2 cup toasted granola
Creating the Magic:
Preheat oven to 180°C. Grease and line a 22cm round cake pan.
Sift flour and cacao into a large bowl, then stir in toasted muesli and raisins.
Mix yogurt, maple syrup, sugar, and milk in a separate bowl until smooth. Fold wet mixture into dry ingredients until just combined. Spoon into prepared cake pan and bake for 40 minutes or until firm.
For the topping, place cacao, icing sugar, and 3/4 cup boiling water in a small saucepan and simmer over medium heat, stirring occasionally, for 5 minutes or until thickened and smooth.
Spread the cooled cake with the chocolate topping and top with the toasted muesli.
