Butter Chicken
TIME: 35 minutes + 2 hours marinating time

What could possibly be better than a warming curry on a winterβs night?
This creamy butter chicken is perfect for family dinners, or reheat for work lunches.
Ingredients:
MARINADE:
1/2 cup plain greek style yoghurt
1 tsp turmeric
2 tsp garam masala
1 tsp ground coriander
1/2 tsp chilli powder
1 tsp ground cumin
1 tsp ground ginger
1 tsp garlic powder
750 g chicken thigh fillets, cut into smaller, bite-size pieces
CURRY:
1 tbsp vegetable oil
1 cup tomato passata sauce
1 cup thickened cream
1 tbsp coconut sugar
1 tsp salt
Basmati rice - to serve
Creating the Magic:
Gather all of the marinade ingredients and mix together with the chicken. Refrigerate for at least 2 hours (overnight is best!)
Heat the oil on high in a large fry pan. Place chicken in the frypan and cook for a few minutes on each side. Add in the curry ingredients and simmer for 20 minutes.
Serve with cooked basmati rice.
