Sweet Potato & Quinoa Patties

Dairy Free - Gluten Free - Refined Sugar Free

Makes 12   |   Prep Time 25 minutes  |   Cook Time 15 minutes


Ingredients:

2-3 tbsp coconut oil
400 g Sweet potato cooked and mashed
200 g Quinoa
2 Garlic cloves minced
1 Onion diced
1 tsp ginger ground
1 tbsp dried Chilli Flakes
1-2 tbsp Curry powder (Hot or Mild)
40 grams spelt flour
1 egg

Instructions:

 

Cook quinoa

Saute onion.

Add garlic , ginger and chilli pepper and cook for about 2 minutes.

Add curry.

In a bowl mix mashed potatoes, cooked quinoa, onion, coriander, egg and flour.

Form into patties.

Shallow fry for 2-3 minutes each side..

Enjoy with a fresh garden salad.
