Sweet Salami

TIME: 30 minutes + 3 hours cooling time

Serves: 12

This Eastern-European-inspired chocolate snack is so versatile you can basically add in any nuts (or lollies!) you like.

Traditional Ingredients:

  • 1/4 cup hazelnuts - raw or roasted

  • 1/4 cup almonds chopped or sliced

  • 1/4 cup pistachio kernels chopped

  • 2 cups dark chocolate chips

  • 1/2 cup crushed vanilla/tea biscuits

  • 1 cup heavy cream

  • 1/4 cup butter

  • icing sugar for decoration

    The Lolly Edition:

  • 1/4 snake lollies- chopped

  • 1/4 banana lollies

  • 1/4 cup marshmallows chopped

  • 2 cups dark chocolate chips

  • 1/2 cup chopped pretzels

  • 1 cup heavy cream

  • 1/4 cup butter

  • icing sugar for decoration

Creating the Magic:

  1. Heat the cream in a saucepan so that it comes to a simmer (not a boil).
Take the cream off the heat and add in the chocolate chips.

  2. Cut the butter into small cubes and place it into the bowl.

  3. Wait a few minutes and begin to stir the chocolate. You may need to reheat the chocolate in the microwave a few times. If so, heat in 20-second intervals. You don't want to overheat the chocolate.

  4. Once the chocolate is a smooth silky consistency, add the crushed biscuits and chopped nuts Stir to combine.

  5. Place a large piece of baking paper or a silicone baking mat onto a flat surface (kitchen benchtop) and pour the cooled chocolate mixture on the baking paper/mat.

  6. Roll the wrap tightly around the chocolate mixture so that it resembles a stick of salami. You can wrap a second piece of wrap over the chocolate salami if you want to make it more secure. Finish off by tying both of the ends.

  7. Refrigerate for at least 4 hours. Once the time has passed, remove the wrap and coat the chocolate salami in icing sugar.
