Sweet Salami
TIME: 30 minutes + 3 hours cooling time
Serves: 12
This Eastern-European-inspired chocolate snack is so versatile you can basically add in any nuts (or lollies!) you like.
Traditional Ingredients:
1/4 cup hazelnuts - raw or roasted
1/4 cup almonds chopped or sliced
1/4 cup pistachio kernels chopped
2 cups dark chocolate chips
1/2 cup crushed vanilla/tea biscuits
1 cup heavy cream
1/4 cup butter
icing sugar for decoration
The Lolly Edition:
1/4 snake lollies- chopped
1/4 banana lollies
1/4 cup marshmallows chopped
2 cups dark chocolate chips
1/2 cup chopped pretzels
1 cup heavy cream
1/4 cup butter
icing sugar for decoration
Creating the Magic:
Heat the cream in a saucepan so that it comes to a simmer (not a boil).
Take the cream off the heat and add in the chocolate chips.Cut the butter into small cubes and place it into the bowl.
Wait a few minutes and begin to stir the chocolate. You may need to reheat the chocolate in the microwave a few times. If so, heat in 20-second intervals. You don't want to overheat the chocolate.
Once the chocolate is a smooth silky consistency, add the crushed biscuits and chopped nuts Stir to combine.
Place a large piece of baking paper or a silicone baking mat onto a flat surface (kitchen benchtop) and pour the cooled chocolate mixture on the baking paper/mat.
Roll the wrap tightly around the chocolate mixture so that it resembles a stick of salami. You can wrap a second piece of wrap over the chocolate salami if you want to make it more secure. Finish off by tying both of the ends.
Refrigerate for at least 4 hours. Once the time has passed, remove the wrap and coat the chocolate salami in icing sugar.

FRIDGE: Keep the chocolate salami in an airtight container in the refrigerator for up to 2 weeks.
