Christmas Spice Cookies

TIME: 30 minutes

Makes: Approx. 15 cookies

 

Switch up your favourite gingerbread biscuits with these delicious cookies. Get the kids to dip the biscuits in chocolate to decorate.

 Ingredients:

  • 400g plain flour

  • 200g butter

  • 1 beaten egg

  • 2 tbsp Christmas spice

  • 100g caster sugar

  • 2 tbsp honey

  • ½ tsp baking powder

  • melted chocolate to decorate (optional)

  • crushed nuts to decorate (optional)

Step 1.
Rub the butter into the flour in a large bowl until you have fine crumbs. Stir in the beaten egg, our Christmas spice mix, caster sugar, honey and baking powder. Stir until a soft dough forms, then cover with a tea towel and chill for 20-30 mins.

Step 2.

Heat oven to 180C/160C (fan-forced). Roll out the dough, cut into festive shapes and bake for 10-12 mins on lined baking trays. Allow to cool.

Step 3.
Dip in melted chocolate and crushed nuts, if you like.
