Molten Chocolate Bundt Cakes - from Alchemy Eats
TIME: 1.5 hours (includes cooling time)
Makes: 6 - 8 small lava cakes
This recipe is pure chocolate dessert heaven!
The cake is light and fluffy, whilst the chocolate ganache is creamy and rich.

Ingredients:
1/4 cup coconut sugar
3/4 cups plain flour
2 tbsp cacao powder
1 tsp baking powder
1 tsp bicarbonate soda
1/4 tsp salt
2 tsp maple syrup
3/4 cup milk (dairy-free)
2 tsp apple cider vinegar
1 small mashed banana
1/4 cup melted coconut oil
50 grams melted dark chocolate
Chocolate ganache ingredients
50 grams dark chocolate
1/2 can coconut cream (use the thick coconut cream from a can. For best results leave it in the fridge overnight.)
Creating the Magic:
Preheat your oven to 180 C. Prepare your doughnut or bundt trays.
In a small bowl add the banana, milk, coconut oil, maple syrup and apple cider vinegar. Stir together.
In a large bowl add the flour, baking powder, salt, bicarbonate soda and cacao powder.
Add the wet ingredients into the dry. Add the melted chocolate.
Stir until well combined - no lumps.
Pour mixture into the moulds.
Bake for 20 - 30 minutes, check after 15 minutes to see how the cakes are doing.
Remove from the oven and allow the cakes to cool.
Prepare the ganache by melting the chocolate, add the coconut cream and stir vigorously until you have a creamy chocolatey mix.
Pour the ganache into the bundt/doughnut hole and let it overflow a little. the ganache will set slightly as it cools, although it wonβt go hard.
Decorate with seasonal fruits if you like.
