Almond and Psyllium Bread - Keto

 Ingredients:

2 cup almond meal
4 tbsp psyllium husk
1 tsp baking soda
1 tsp salt
4 large eggs
4 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
1/2 cup warm water
2 tsp fresh herbs, chopped

Optional: A handful of seeds and nuts to top (i.e pepitas, sunflower seeds, chopped hazelnuts, and almonds)

  1. Preheat the oven to 180°C. Line a loaf tin with a baking paper.

  2. In a large bowl, whisk together almond meal, psyllium husk, baking soda and salt.

  3. In a separate bowl, combine the eggs, olive oil, apple cider vinegar, herbs and warm water.

  4. Add the wet ingredients to the dry, then stir until just combined.

  5. Set the batter aside for 5-10 minutes to allow the psyllium husk to absorb the water.

  6. Transfer the batter to the prepared loaf tin. Sprinkle over the nuts and seeds if using.

  7. Bake for 45-55 minutes. The bread is done when a butter knife inserted in the centre comes out clean, and the top is firm and crust-like.

  8. Allow the bread to cool completely before removing from the pan and slicing.
