Nut Brittle
TIME: 45 MINUTES (includes 25 minutes cooling time)
Serves: 12 as a snack

Peanut Brittle, Macadamia Brittle, Almond Brittle, Pecan Brittle, Cashew Brittle, Hazelnut Brittle - however you like it, this toffee makes your nut snack AMAZING!
Simple and quick to prepare, nut brittle also makes for stunning hand made gifts.
Ingredients:
2 cups white (or caster) sugar
1/2 TSP fine table salt
3 cups of nuts
1 1/2 cups water
2 TBSP butter or margarine
1/4 TSP Bicarbonate Soda
Creating the Magic:
Line your tray - we recommend using a reusable silicone mat.
In a medium saucepan add the water, salt, and sugar and put onto medium heat.
Stir occasionally. Once the mixture is boiling gently and the sugar has dissolved, set the stove top so the mixture boils gently for about 10 minutes.
Keep an eye on your mixture. Once it turns from clear to a yellow/amber you need to turn the heat off straight away!
Add the butter and baking soda and continue to stir. The mixture will foam up - this is normal.
Once the foaming has subsided and the mixture is looking glossy, stir through your nuts.
Turn the mixture out onto your baking tray and flatten it out.
Place in the fridge for about 20 minutes to set.
Break into pieces and enjoy!
