Double Choc & Coconut Cricket Cookies

TIME: 20 MINUTES + COOLING TIME

Makes: 12-15 cookies

 

Cricket protein powder is a great source of protein for those on a paleo diet, or ento-vegans looking for an extra protein boost to their diet.

Just a note: if you are allergic to shellfish, you may be allergic to crickets.

 Ingredients:

  • 1/2 cup shredded coconut

  • 1 cup almond meal

  • 1/4 cup cricket powder

  • 1/3 cup cacao powder

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/3 cup maple syrup or agave syrup

  • 1/3 cup almond butter (or any other nut butter)

  • 1/4 cup coconut oil ; melted

  • 1 tsp vanilla extract

  • 1 egg (substitute with 1 mashed banana for a vegan recipe)

  • 1/2 cup dark chocolate chips (substitute with vegan choc kibble for a vegan recipe)

Creating The Magic:

  1. Preheat your oven to 200C

  2. Mix all dry ingredients together. Mix all wet ingredients together.

  3. Make a well in the dry ingredients and fold in the wet ingredients. Once combined spoon out the mixture onto a greased or lined baking tray into about 15 spoonfuls.

  4. Bake for 10-12 minutes.

  5. Cool & Enjoy!
