Double Choc & Coconut Cricket Cookies

Makes: 12-15 cookies
Cricket protein powder is a great source of protein for those on a paleo diet, or ento-vegans looking for an extra protein boost to their diet.
Just a note: if you are allergic to shellfish, you may be allergic to crickets.
Ingredients:
1/2 cup shredded coconut
1 cup almond meal
1/4 cup cricket powder
1/3 cup cacao powder
1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup maple syrup or agave syrup
1/3 cup almond butter (or any other nut butter)
1/4 cup coconut oil ; melted
1 tsp vanilla extract
1 egg (substitute with 1 mashed banana for a vegan recipe)
1/2 cup dark chocolate chips (substitute with vegan choc kibble for a vegan recipe)
Creating The Magic:
Preheat your oven to 200C
Mix all dry ingredients together. Mix all wet ingredients together.
Make a well in the dry ingredients and fold in the wet ingredients. Once combined spoon out the mixture onto a greased or lined baking tray into about 15 spoonfuls.
Bake for 10-12 minutes.
