Chocolate Chia Pudding

TIME: 4 hours - including setting time.

Makes: 4 servings

Is it breakfast? Is it dessert?
Chocolate Chia pudding is perfect to hit those sweet cravings but is so full of fibre that it’s good for you!

The best bit - it will store in the fridge for up to a week.

 Ingredients:

  • 2 cups almond milk - or your milk of choice

  • 8 TBSP Maple Syrup

  • 1/2 cup chia seeds (we used black chia seeds)

  • 1/3 cup cacao powder

Topping ideas

  • Granola - try our Chocolate Granola!

  • Fresh fruit - strawberries, raspberries, peaches, blueberries

  • Flaked Coconut

  • Dried medjool dates, dried peaches.

 

Creating the Magic:

Grab 2 bowls.
IN the first bowl add 2 cups of milk, 1/4 cup chia seeds, 4 TBSP Maple Syrup & 1/3 cup cacao powder. Stir until combined and you don’t have any cacao lumps.

In the 2nd bowl add the remaining milk, maple syrup and 1/4 cup chia seeds. Stir until combined.

Place a tea towel or beeswax wrap over each bowl and place in the fridge for 30 minutes.
After 30 minutes give the mixtures a really good stir.
**This is important, otherwise, your pudding will end up more like soup than pudding!

Place the mixtures back in the fridge for another 30 minutes.
Remove from the fridge after 30 minutes, give each mixture a good stir again.

In 4 glasses or jars layer the pudding mixtures - 1 large scoop of chocolate, 1 of plain and so on.
Then place the puddings back into the fridge.

After 3-4 hours, the puddings are ready to eat. Top with your favourite fruits or granola.
