Chicken Nuggets & Chips

Dairy Free - Gluten Free - Refined Sugar Free

Serves 2   |   Prep Time 25 minutes  |   Cook Time 30 minutes


Ingredients:

250g Chicken Breast

1 Large Sweet Potato

2 Organic Eggs

1 1/2 cup (+ 1 tbsp) Almond Meal

1 tsp Moroccan Spice Mix

1/2 tsp Garlic Powder Salt & Pepper

Coconut Oil (enough to shallow fry in a pan)

 

Instructions:

Preheat oven to 220 degrees (fan forced).

Peel sweet potato and cut into thin fries. Place the sweet potato fries into a large bowl with enough water to cover and let sit for 10 minutes (this will help fries to crispen up when baking).

 

While the fries are soaking, cut chicken into even, desired nugget sizes and set aside. In a bowl, whisk two eggs and set aside ready to dunk in the chicken pieces. In a separate bowl add in the almond meal, a generous amount of salt and pepper and the Moroccan spice mix. Ensure mixture is well combined and set aside.

 

By this time, the fries should be ready to prepare to go into the oven. Drain the water away and place fries onto a towel to pat dry. Once dry, place them into a large zip lock bag along with 1 tbsp of almond meal and the garlic powder.

Zip tight with some air inside the bag and give a good shake until all of the fries are evenly coated with the almond meal.

On a lined baking tray, evenly spread out the fries so that none of them are touching and lightly coat with some coconut oil. Place into the oven and bake for 30 mins.

One chicken piece at a time, coat in the egg evenly and then in the almond meal and set aside as you move onto the next piece. Once all of the chicken has been coated in the egg and almond meal mixture it is time to shallow fry them in a pan with enough coconut oil to cover the base generously.

Cook on medium to high heat for 3-4 mins before turning over and continuing to cook for another 3-4 mins.

Pat nuggets dry with some paper towel.

Once the fries are cooked, sprinkle with some salt and you are ready to serve.
